The outside skirt steak is one of our favorite cuts for the grill. Cut from behind the rib section, it is not as dense as the other steak cuts. The outside skirt marbling is moderate to abundant, keeping it juicy and flavorful. It will marinate and cook quickly and is perfect for grilling. Its light beef flavor and tenderness is also popular with kids. The skirt steak is also a great way to add protein to your favorite salad.
Once cooked, the skirt should be sliced thin and on an angle. Remember to cut across the grain for tenderness, like you would a flank steak.
